Hey there! Happy Tuesday! I hope you’re having a great start to your week! It’s extra warm here in Arkansas this week, so I’m pretty excited to share this recipe with you guys today.
If you’re new around here, every Tuesday I share a fresh new recipe with you, apart of my “Chewsday Tuesday” recipe series! I’ve partnered with New South Coop this year to help get the word out about their amazing CSA share boxes and supporting our Arkansas farmers by buying locally grown foods. Each week, they share a box packed full with the most delicious fruits and veggies and I get to come up with a new way to cook them up!
This week’s recipe is refreshing, sweet and down right delicious. Maybe you could take this drink to your next Summer party! It’s so easy to make, you’ll be whipping it up in no time. Let’s get to the good stuff, shall we?
Check out these gorgeous berries just begging to be blended into a blueberry lemonade! Needless to say, I was pretty excited to see a big box of berries in this week’s CSA box. I couldn’t wait to get the juices flowing!
Blueberries are not only packed to the brim with antioxidants, but they’re great for regulating blood pressure, helping to prevent infections, and are a strong heart healthy fruit as they help improve blood flow. They even help regulate blood sugar levels among other things! Who doesn’t love a good blueberry recipe with all these benefits wrapped into one tiny little fruity treat?
Here’s what you’ll need:
1) 2 cups fresh blueberries
2) 4-6 lemons (Juice should make 2/3 cups)
3) 3/4 cup granulated sugar (Or less if you’d like!)
4) 4 cups of cold water
Total Time: 5-10 minutes
Prep Time: 5 minutes
Blend Time: 1 minute
Serves: 4 glasses
*Kitchen Tools: (optional) Citrus Juicer, Mesh strainer
Step 1) Combine the 2 cups of blueberries, 1 cup water and 3/4 cup granulated sugar into the blender. Blend for about 1 minute or so until the berries are pureed.
Step 2) If you are using a strainer, go ahead and place the pureed berry mix over your desired juice canister and strain. You’ll see the small pieces of extra blueberry that separate from the pureed berries in the strainer here. Of course, if you don’t mind those being in your drink you can skip using the mesh strainer all together!
Step 3) Juice your lemons to make 2/3 cup of fresh squeezed juice.
Step 4) Then, combine your lemon juice with the blueberry puree mix and the last 3 cups of cold water. You can add more water here if you’d like it to be a little thinner of a drink mix.
*I sliced a few lemons to use as a garnish to throw into my canister as well. Not required at all, but a definite party pleaser in the appearance department! 🙂 Maybe even throw in a few extra blueberries on top for fun!
You can also add your ice here if you’re serving immediately. Check out that gorgeous color too!
Step 5) Serve immediately and enjoy!
