For today’s Chewsday Tuesday recipe, I wanted to share a crockpot recipe that I’ve mentioned before! It’s too delicious not to share, especially when it’s this cold outside– everyone needs a good crockpot dinner brewing! I’ve made this dish too many times to count, and it only seems to get better every single time. It’s definitely a hit every single time in our house when this is on the dinner menu, especially on days like today.
Here’s everything you’ll need for this delicious crockpot dinner:
2 Pounds Boneless Skinless Chicken breasts
1 Bundle of fresh green beans
4 Cups diced red potatoes
1/3 cup FRESH lemon juice
1/4 Cup Olive oil
1 tsp. dried oregano
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. onion powder
2 garlic cloves, minced
Notes: **Eyeball the potatoes, depending on how many people you’re serving. Also, crockpot sizes vary so this is a factor too, depending on how many you can fit.
**1/3 cup FRESH lemon juice of a real lemon, not the squeeze bottle of lemon juice. Trust me, it’s better. Also, I used a little less lemon here because 1/3 cup is pretty “lemon-y”. Just keep that in mind. I used 1/4 cup and it was perfect.

4 Hours and 15 minutes
Prep Time:
15 minutes.
Total Cooking Time: 4 hours
Servings:
2-4 People (Depending on how hungry you are)
Start by peeling and dicing potatoes into cubes. Then, place chicken breasts in the bottom of the slow cooker in the center. Next add your potatoes on one side and the green beans on the other.
In a separate bowl, mix together the lemon juice, olive oil, oregano, salt, pepper, onion power and garlic cloves.
Next, pour the mixture evenly over the chicken, green beans and potatoes.
Then, cover and cook on high for 4 hours. Make sure NOT to open the lid during the cooking time.
Serve and enjoy!
