Hey, hello, hi! Happy Tuesday! Is your mouth watering yet, just staring at the above salsa? Maybe I’m the only one, but I’m pretty sure I could live on salsa! Breakfast, lunch and dinner! It literally goes with EVERYTHING. Chips, eggs, burritos, you name it–salsa goes! Then add fresh slicer tomatoes to it, and you’ve got quite a delicious treat on your hands.
This week’s New South CSA box was the LAST one of the summer season. I’m still trying to recover from the sadness, so chips and salsa is currently helping me drown my sorrows. I got a big bundle of fresh cilantro and a box of slicer tomatoes so salsa came right to my mind when I was brainstorming recipe ideas. They go hand in hand like PB and Jelly or macaroni and cheese, am I right? There are some recipes out there that call for just using canned tomatoes, but I’m all for using fresh, local tomatoes because they’re simply delicious to me! I admitted my love in my last post for tomatoes lately, so this recipe just fills my never ending tomato craving.
I’m also not a fan of making just cans upon cans of salsa either. I may be crazy, but I’d rather just a simple serving as I want it. So, this recipe is just enough to have for a family appetizer before dinner if you’d like! Or however you’d please. But, overall it serves one good sized bowl of salsa.

If you’d like to save your salsa for a later date, just pour it straight into your favorite mason jar! It should stay good for a few days in the refrigerator!
