Somehow, this post is going up a tiny bit late, so I apologize! Things have been a little extra crazy around our corner of the world so bare with me this week as I bring you another round of “Chewsday Tuesday”! I have a super easy simple-as-pie recipe to share with you today that I know you’ll love! Did I mention it was easy? Okay, good. Let’s get right into the good stuff!
This week’s CSA box was filled with the most beautiful veggies ever and I was super excited to see another batch of the gorgeous green mix so that I could throw together a delicious salad this week. I’m not a major fan of many dressings so I’ve always been interested in the ones that are homemade with super simple ingredients. My friend, Gracie, inspired me to make my own version of salad dressing when we had a dinner date a few months back, and here we are! Homemade Honey-Dijon salad dressing that is just the great mix between sour but sweet and just the kick your next fresh green salad needs! NewSouth sends over the best of the best when it comes to green mixes and this week’s spring mix did not disappoint.
Here’s what you’ll need:
1/4 cup olive oil
1/4 teaspoon sea salt
1/2 teaspoon minced garlic
2 TBS dijon mustard
1 lemon (Juiced!)
1 TBS apple cider vinegar
2 TBS honey
Ground pepper (just a pinch!)
Total Time: 5 minutes
Prep Time: 1 minute (As long as it takes you to squeeze a lemon really…)
Servings: 3-4 salad dressings
Step 1) Combine all ingredients in the blender. Blend until smooth and creamy.
Step 2) Serve and enjoy! (I did mention it was easy, didn’t I? Seriously, it doesn’t get better than this!
You can also store the rest of yours in a mason jar in the refrigerator for a few days for a few additional salads.
