I’M BACK!! I can’t believe it’s actually been so long since my last Chewsday Tuesday post! I didn’t mean to leave you guys hanging! Of course I know you lost sleep over my absence, right? Ha! 😉 Kidding! Anyways, I am so excited to be back to my recipe posting and sharing with you guys today! Vacation week caused a minor hiatus but never fear: I have a summery-treat for you today packed with the perfect amount of sweet & savory!
Now before I get too far into this post, for any new readers around here–Each Tuesday I share a new farm-fresh recipe with ingredients from my weekly CSA box from New South Coop . I get to pick up a weekly produce box from
them packed to the brim with locally grown and seasonally harvested fruits and veggies! It’s seriously the absolute best! We get to support local farmers together and celebrate their hard work and dedication that they put into the produce seasons day in day out while serving others. All the while filling up our bodies with some seriously healthy nutrients! WIN-WIN!
Today’s recipe screams SUMMER! While we’re wrapping up this fun in the sun season around here, I had to share one of the last few recipes of this Summer’s share boxes. We got a big bag of fresh spinach last week and I was craving this salad. We’re also sadly winding down berry season which breaks my heart way too much, so I’m squeezing out every last drop possible.
I was also inspired to make this recipe by Nicks brother who came in town a few weeks ago and actually made something similar for dinner one night. So, I decided I had to re-create my own to satisfy this craving of mine.
The BEST part? No baking or cooking required! (INSERT: YAY!!)
Let’s get right to the good stuff!
Here’s what you’ll need:
1) Spinach
2 Goat cheese (local if possible for an extra local feel!)
3) Farm fresh strawberries
4) 1 handful walnuts, chopped
5) 2 TBS (or so) Olive oil
Total Time: 5 minutes
Serves: 3-4 side salads or 2 main salad dishes (Depending on how much you’d like to share, gather ingredients accordingly.)
Step 1)
Chop your walnuts, slice your strawberries in halves and rinse your spinach.
Step 2)
Drizzle your olive oil on the spinach.
Step 3)
Top your salad with cheese, chopped walnuts, and berries.
Step 4)
Serve and enjoy!
