Well, would you look at that, it’s Tuesday again! YAY! I have a shiny new delicious recipe to share with you today and I think you’re really going to like it! Speaking of, what were your thoughts on last week’s Chewsday Tuesday recipe? Was that pasta not to die for? Yum, yum and more yum! We’re taking a different turn today though and switching it to a quick and simple side dish that you can serve all year round! Any green bean lovers out there? I grew up on green beans so I’ve always been a major fan, but these, THESE take the cake! New South Coop’s CSA box this week is pretty awesome and I just can’t quite decide which veggie has been my favorite so far! They’ve all been AMAZINGLY fresh and so declicious, it’s hard to make a girl choose. {If you haven’t checked out New South Coop already, do it ASAP! They’re gearing up for their Summer CSA share boxes and you NEED to be signed up, well, yesterday! If you live in Arkansas, that is! If you don’t live here- go ahead and find out where your local farmer’s market is and find your local CSA community to join and support your farmers!} But, when I saw green beans my heart skipped a little beat or two. I mean, you can’t go wrong with green beans–literally ever. Perfect side dish with pretty much any and every meal.
Would you believe me if I told you this recipes was packed with flavor but also HEALTHY AND super simple to make? Yes, good for you, delicious AND easy?! Who knew it could be possible? 😉 Let me tell you everything you’ll need to get this dish ready to serve, k?
Here’s what you’ll need:
1) 1 Bundle fresh green beans
2) 2 tbs olive oil
3) 2 tbs minced garlic {OR 4 (ish) cloves garlic, chopped or minced)
4) Pinch of pepper
5) Pinch of salt
6) A few pinches of Parmesan Cheese
*You’ll also need parchment paper to line your baking sheet to prevent the veggies from sticking.
Total Time: 23-25 minutes
Total Cook Time: 17-20 minutes
Total Prep Time: 5 minutes
Serves: 2-4 (depending on how much you like our green beans!)
Step 1) Pre-heat your oven to 350 degrees. While this is warming up, go ahead and chop the ends of your fresh green beans off to get rid of those pointy little edges.
You’ll want them all to end up looking something like this:
Step 2) Place your green beans in a separate bowl and pour the olive oil over them.
Make sure to spread the oil evenly around to cover each green bean.
Step 3) Then, add your pinch of salt, pepper and garlic over the green beans.
Step 4) Place the green beans on your baking sheet lined with parchment paper. Make sure they’re spread out on the pan so they all cook evenly throughout.
Step 5) Place your green beans in the oven and set your timer for about 10 minutes. After 10 minutes go in and mix them around, to again, make sure they’re cook evenly. Place them back in the oven and bake them for an additional 5-10 minutes.
Step 6) The last 5 minutes in the oven, go ahead and sprinkle on your parmesan cheese to the top of the beans.
Step 7) Serve and enjoy!
