Happy Chewsday Tuesday you guys! How did last week’s recipe go? Did you give it a try? I sure hope so because it was fabulous! But, let me just tell you that this one may have just hit a home run in my book. Seriously, this fresh strawberry nacho recipe hits your taste buds like a sweet summer-y heavenly treat with each bite. It also doesn’t hurt that it’s gorgeous to look at. 😉 Dare I say, almost too pretty to eat? Nah, not possible.
I’m absolutely in love with the strawberries that I got in my box with this week’s New South Coop CSA box. Is there anything better than local fresh strawberries? I’d say NO, definitely NOT. Strawberries are packed full of health benefits like antioxidants, lowering cholesterol, lowering blood pressure, reducing inflammation and they’re great for your eyes! So, why not have them for dessert tonight, right? Let me share this delicious recipe with you right now so you can get to makin’, K?
Here’s what you’ll need:
1) Fresh strawberries (Of course!)
2) Cool Whip
3) 1 TBS Coconut Oil (Depending on how many tortillas you’ll be using)
4) Raw Cane Sugar (Or Granulated Sugar, whatever you have on hand)
5) Ground Cinnamon
6) Fresh Tortillas or Pita bread
Total Time: 10 minutes
Prep Time: 5 minutes
Step 1) Heat your coconut oil in a sauce pan to “fry” your tortillas until they’re golden brown on each side. Flip it over once they’re pretty soft and brown on the outsides.
Step 2) Remove your tortillas from the saucepan and add them to a paper towel. Sprinkle on a generous mixture of sugar and cinnamon to both sides of the tortilla. Then, cut them into bite-size triangles. Set aside.
Step 3) Dice a couple of the strawberries to make for your “salsa”. Then sprinkle a little bit of your sugar on top. Let these sit for about 10 minutes, then toss around.
Step 4) Time to layer up your “nachos”! I put my tortillas on the bottom, then the whipped cream in the middle, then added the strawberry “salsa” on top.
Step 5) Dive right in and ENJOY!
