Hi friends! Happy Monday to you!! I hope you had the most wonderful weekend! It sure has been warming up here the past few days and I’m in love with these Spring like vibes! We really couldn’t have missed getting outside over the weekend, especially after getting snow just a few days earlier this past week! Arkansas weather sure is interesting….
Anyways, thanks so much for stopping by the blog today! I’ve got some “Meatless Monday” ideas for you in today’s post as well as a few randoms that are on the list as well!
We went out for multiple walks this weekend, but yesterday afternoon’s accidental 6-miler was the best one of them all. We absolutely did NOT plan on getting out there for so many miles, but once you’re on the river trail it feels like you could just go on forever! We had storms coming our way last night, so we were pleasantly surprised at just how good it felt beforehand! We had just a tiny bit of humidity and plenty of clouds but the fresh air and wind that was blowing was so refreshing!
I love living right by the river.
This view really never gets old.
I’ll take that for a good solid workout any day! Needless to say we earned our dinner!
It was another Spaghetti Sunday for us yesterday, just the way I like it! There’s just something about spaghetti and Sunday’s that go together so well! 😉

So, one thing I’ve been wanting to really implement more of for 2018 is an overall “more” meatless meal plan. Obviously, I don’t do this 100% of the time, but it’s definitely one of my goals to lower our meat intake on a regular basis. I thought I’d share a few of my favorite “meatless meals” with you and see if you have any favorites that you want to share too! Whether it’s cutting out meat for an entire day long once a week or just in one to two meals with no meat each week, I feel like if I can slowly decrease our consumption it would be a great step for us! I am not a vegan or vegetarian 100% of the time, but I do feel a difference in my overall health when I lower my consumption regularly. I find it’s easier to digest foods when I’m not bogged down with an overconsumption of meat with each and every meal.
I love when I can find new ways to make meals with more veggies, which is also a huge goal for me in 2018 too! By trying to lower our meat intake, I’m constantly searching around for all kinds of new recipes to try out, breakfast, lunch, or dinner for protein rich foods too which is always fun to me!
Here are a few of my favorite “Meatless Meals” so far in our —less meat, more veggies–journey:

Oatmeal loaded with berries and nut butter
Natural peanut butter sandwiches with a side of carrots, broccoli and hummus
Avocado toast
Spaghetti squash with meatless sauce
Bean tacos
Large green salads with fruits and plenty of veggies mixed in
Baked sweet potatoes with almond butter & cinnamon
Green smoothies
Baked potato soup
