Hey guys! How’s your Monday going? I hope wherever you are, it’s going well!
I was off writing in my new 2017 planner and noticed that Christmas is in two weeks. Is it bad that I haven’t bought a single gift yet? Probably….((Sigh)) I ALWAYS tell myself that I’m going to buy my gifts early in December to avoid the crazy rushes of shopping and all that chaos, but does it ever happen that way? OF COURSE NOT.
Anyways, let’s talk about something that I DID do right today.
How about cookies? Any cookie lovers out there? If you’re not a cookie lover, I may as well go ahead and let you know you probably can’t possibly be a human. Just throwing that out there. 😉
Today I have an amazingly EASY delicious choclately recipe for you that you will feel the need to bake at least once a week. Or just always have them on hand, whichever comes first.
These oh-so-delicious cookies are GLUTEN FREE, DAIRY FREE and AMAZINGLY GOOD! Could there be such a thing? I say ummm… 100% YES.
I was looking for a good alternative to all of these cookie recipes that are loaded with
a) tons of sugar and
b) tons of gluten/dairy and other crazy science-like ingredients.
Then I stumbled upon these and they hit the spot! I’m a big fan of those girl scout cookies “Samoas” and can I just tell you these are like their skinny cousins? Yep, so good without all the extra stuff inside.
So, you only need 4 ingredients for these babies. Want to know what those are?
Well let me just tell you!
Ingredients:
2 mashed bananas. (About 1 cup or so)
1 1/3 cup unsweetened shredded coconut
1/4 cup walnuts
1/4 cup dairy-free chocolate chips, (or raisins if you don’t want sugar!)
Total Cook Time: 15 minutes
Total Prep Time: Less than 5 minutes
Step 1: Preheat oven to 350 degrees and grease a baking sheet, or line with foil.
Step 2: In a seperate bowl, go ahead and mash up your bananas.
Step 3: Stir in the remaining ingredients.
Step 4: Scoop out 2-ish tablespoons of the mix and gently form into a ball with your fingers. It may be a bit crumbly, but you can form them pretty easily.
Step 5: Place the cookies on your cookie sheet and flatten them out with your fork to make sure they cook throughly and aren’t “too thick”.
Step 6: Bake for 15 minutes or until the coconut ends turn a tiny bit brown on the edges.
Step 7: Let cool for a few minutes, then ENJOY!
