Happy Monday! I can’t believe the weekend flew by as fast as it did! Hopefully you had a really great weekend! We didn’t do anything too crazy which was super nice. It was nice and relaxing! I’m ready to make this week super productive though! That’s exactly why I wanted to start off this Monday with a yummy + energizing recipe! It’s about 5:15PM here and I’ve been snacking on these energy balls all day that I’m not even super hungry for dinner!
This Peanut Butter Oat Energy Ball recipe is super simple and you can mix and match with whatever you already have in your cabinet!
I love the natural peanut butter and honey that you can get from Whole Foods so I grabbed both when we were at the grocery store this weekend. If you haven’t ever tried the natural PB or Almond Butter this is your sign to do so! It’s seriously the best and has no other ingredients besides almonds or peanuts. That’s all!
I grabbed a few of the ingredients from the bulk section there too, like the oats and slivered almonds.
Here’s everything you need:
- 1 1/2 cups oats
- 1/4 cup flax seeds
- 1/2 cup shredded coconut
- 1/2 cup slivered almonds
- 1/3 cup honey
- 1/3 cup coconut oil
- 1/2 cup peanut (or almond) butter
- 1 teaspoon pure vanilla extract
- Additional option: 1 handful of chopped dark chocolate
In one bowl, combine your dry ingredients: oats, flax, shredded coconut and almonds.
Mix them all together!
In another bowl, combine your wet ingredients: Honey, Coconut oil, peanut butter, vanilla.
Mix together.
Once your “dough” is mixed well–go ahead and let it set up in the refrigerator for 30 minutes. This will help the coconut oil solidify enough to be able to form the ball shapes.
Once the dough is ready, go ahead and form your energy balls!
Keep them refrigerated in an air tight container for ultimate freshness!
